Indian Dish- Spiced Mix Vegetable (cooks quickly, tastes great)



 


                                                          Vegetables you need
 
250g  Cauliflower
2-3 medium-sized Carrots (cut lengthwise)
150g Beans (cut lengthwise)
100g Peas
2-3 Capsicums (cut lengthwise)
2 medium-sized Onions (chopped)
2 meduim-sized Onions ( cut and layered)
5-6 medium-sized Tomatoes (pureed)
2 tbsp Ginger-Garlic paste
Fresh coriander leaves (for garnishing)
 
                                                           Spices you need
1tsp Cumin seeds
1 Cinnamom stick
3-4 Green cadamom
1tsp Turmeric powder
1tbsp Coriander powder
1tsp Red chilli powder
1/2tsp Garam masala (blend of Indian spices)
Salt (to taste)
2-3 Black cardamom seeds (crushed)
 
and; 4tbsp Oil
 
                                                                          Method
1. Heat oil, add cumin seeds, cinnamom stick and green cardamom. Let them crackle.
2. Saute chopped onions, ginger-garlic paste and coriander powder.
3. Add cauliflower, carrots, peas and beans. Cook till the vegetables soften.
4. Once the vegetables are cooked,add layered onions and capsicums (we don't want to cook them thoroughly)
5. Now add turmeric powder, corainder powder, garam masala, red chilli powder and salt.
6. Lastly add tomato puree and crushed black cardamom seeds. Cook till the tomatoes are done.
7. Garnish with corainder leaves.
