1kg Ladyfinger
For Filling
2tbsp Dry mango powder (amchur)
1tbsp salt
1/2 tbsp chilli powder
For Sauce
6-7 medium sized tomatoes (pureed)
1tsp musturd seeds
1tsp cumin seeds
1/2tsp fennel seeds
1tbsp coriander powder
2tbsp brown sugar (gur shakkar)
1/2tsp chilli powder
salt to taste
4tbsp oil
For Garnishing
Lemon
Fresh coriander leaves
Method
1 .Slit the ladyfinger and fill in all the filling ingredients.
2. Grill the ladyfinger till done.(Brush up the ladyfingers with some oil before grilling)
3. In a pan, heat the oil and add musturd seeds, fennel seeds n cumin seeds. Let them crackle.
4. Now add tomatoes and coriander powder. Let it cook till the tomatoes starts leaving the oil.
5. Caremalise the tomatoes with brown sugar and spice them up with chilli powder. Lastly add salt.
6. Arrange the grilled ladyfingers in rows on a plate (as shown ), pour the sauce on, sprinkle lemon juice and garnish with lemon cuttings and coriander leaves.
